Opened November 1919 by Rebecca 'Ma' Edelstein, who greeted every customer with 'Es and es' — Yiddish for 'eat and eat,' which gave the restaurant its name. Still family-owned four generations later by great-grandchildren Gary Mitchell and Amy Baum.
